PremierLeague-News.Com - Breaking Sport Transfer News ! A popular Cornish pub will accommodate diners and drinkers in a huge tipi when it reopens on Monday (April 12). The Fox’s Revenge at Summercourt, between Truro and Newquay, has transformed its garden with an 80-person tipi to adhere to outdoor dining lockdown rules which come into force next week. Chef Ben Ambridge has created a dedicated barbecue menu for the summer, including his twist on roast dinner, cooked over fire. The Fox’s Revenge opened under the new ownership of Ben and his partner Evie in February 2020, only a month before the first lockdown shut its doors. The couple made the decision to invest in their garden space, pre-empting the longstanding effects of the coronavirus. They said the tipi structure gives the pub’s customers a cosy and protected environment to eat and drink in, while following government regulations on outdoor dining and social distancing. They added that the tipis were a popular addition last year, creating a festival-like atmosphere in the pub’s garden. Much of the meat on the new menu has been slow cooked in the pub’s Barbecue Mates cabinet smoker.

. Veggie options and side dishes include Tandoori Smoked Cauliflower and Charred Watermelon and Feta Salad. Ben has also created a Sunday Smokehouse menu that showcases the best of a classic roast, cooked outside over fire. The menu will offer a choice of beef, pork rib, chicken thigh or vegetable loaf, served with garlic and rosemary roast potatoes, truffled cauliflower cheese and leeks, topped with their signature smokeshack gravy and a Yorkshire pudding. Ben is a graduate of Jamie Oliver’s Fifteen in Cornwall and has worked in kitchens around the South West coast since 2012. He and Evie had been on the hunt for their own space, and after revisiting the pub multiple times as customers and potential buyers, they put in an offer in November of 2019. In May, the pub will be opening its revamped indoor space to the public which has seen a facelift make the most of the 17th century building’s wooden beams and fireplaces. The upstairs has been kitted out as a relaxed bar area able to host parties and private events.
